For the new sushi restaurant in the center of Nuremberg, Bermüller + Niemeyer developed a holistic concept for the conversion and redesign of the existing building. This provides a modern interpretation of Far Eastern dining culture of color and materiality. With this in mind, the high-quality hospitality area on the ground floor of the Adina Hotel Nuremberg was completely expanded during ongoing operations. In the guest room, a lively image is created from a symbiosis of wooden elements and acoustic objects. These develop a flowing wave structure that extends from the ceiling over the walls to the floor of the restaurant, where it rises again as seating furniture. The guest is offered the choice between more intimate seating areas in the secluded area of the dining room and an open atmosphere in the front bistro area. In the center point of the room the Sushi master is preparing the food. The acoustic baffles running parallel to the wooden slats not only contribute to the room acoustics but also the eco-friendly aspect by upcycling PET-bottles.
