We started from the Hotel brand values, being defined as legendary, gracious, and inspiring; making the everyday a little less everyday, giving ordinary a splash of extraordinary. The dining room seats 100 with a show kitchen in the center and a harvest table and dispensing bar at the furthest end. All seats have a direct view to the harbor. We unified these spaces with a soft palette of ocean blues and metalwork in soft gold tones that lends a European brasserie feel to the fit-out. It is a light and airy palette suited to breakfast and lunch dining, which copes equally well with the transformation into a night-time restaurant. AND Associates has balanced a fresh and clean ambiance with elegant and contemporary design to evoke a sense of subtle luxury. This sophisticated approach to hotel design is more residential than commercial. And always the activity of char grilling and live cooking is front and centre.
