At Palmerio, guests step into a ‘beautiful people doing beautiful things’ Slim Aarons inspired by Chef Sandoval’s ‘Mediterranean-meets-Baja-Riviera’ cuisine.
The team was challenged to eschew the prevalent style of surrounding upscale properties to instead create luxury meets authentic locality. Sunwashed colors, used as alternatives to vibrant Mexican textiles, resemble the faded tones of old Kodachrome photos capturing the golden age of the Riviera.
Hand-cut terra cotta flooring, blue-green glazed brick columns, and a custom-crafted clay barrel vaulted ceiling deliver rich texture. Custom booth seating, sculptural chairs, enameled lava tables in periwinkle and celadon and hand-woven pendants bring the experience to life. Wall niches display vintage and modern pinas from Michoacán.
At the heart of Palmerio is a bustling European-style open kitchen, featuring an aged brass and zinc French range hood.
The private dining room provides views of the theater kitchens and Sea of Cortez. A graceful arched plaster loggia wraps the dining room. The loggia flooring is encaustic cement tile in a vibrant blue that marries with the encaustic tile wainscot that wraps the building.
