Ergon Bakehouse celebrates baking and hospitality in a restored heritage building in Athens, designed by Vasilis Tsagris in the early 20th century. Formerly residential and commercial, the building now hosts a bakery, retail space, eatery, and hotel, blending historic charm with modern design. Visitors enjoy original features, like plasterwork and an antique staircase, alongside the 72H Artisanal Bakery, where the open-plan setup reveals the baking process.
Guests are welcomed into 29 spacious rooms inspired by the building’s heritage and bakery elements. Each room includes thoughtful touches, like the “onda,” a deep recessed sofa that doubles as a bed. The detailed design throughout uses firebrick walls, stainless counters, and linen fabrics to echo sourdough’s maturation process. Adjustable lighting and shading devices create a serene atmosphere, enriched by artwork from Stratis Tavlaridis and Nikos Handolias, inspired by the craft of baking and the 72H Artisanal Bakery.
